Last Friday, my roommate Sandra baked these beautiful chocolate chocolate (& white chocolate) chip cookies a la Martha Stewart, which she modified by substituting white chocolate chips for the dried cherries. The best part of this cookie is that there are bittersweet chocolate chips not just dropped into the batter, but melted into the batter, too!
We ended up spooning some ice cream in between two cookies to made mini ice cream sandwiches.
In the spirit of Friday night & a 3 day weekend we also made these fresh strawberry-basil martinis, which we found a recipe for from Food and Wine.
The recipe calls for 1 oz. of both vodka and gin but Sandra and I aren’t gin people so we poured a little extra vodka into the shaker and topped off our drinks with a splash of champagne! I love this cocktail – the strawberries and fresh mint remind me of summertime. One is definitely enough, though. Any more than that and you’ll be reminded of a headache!
I hope you enjoyed yesterday’s Ingredient Challenge but if you missed it, check it out! Myself, Marci Gilbert, Dixie Chik Cooks, And Love It Too and From the Little Yellow Kitchen all made different things using quinoa. All of the quinoa-creations came out great! Everyone had totally different and delicious dishes!
Well, I’m off to my job on campus at the Cancer Center. Have a great day!
