Black Bean-topped Steak Quesadillas = Love

Hope you’ve all had a great Monday! I’m just getting out of class and am now on the bus home.  I figured I’d  take advantage of the long ride and write a post for today.

The other night I made myself steak quesadillas and realized I hadn’t yet written about this staple meal of mine.  I love them because they’re super filling, nutrient-dense and I get at least 3 meals out of it when I cook up a bunch of veggies and meat!

I almost always fill my quesadillas with sautéed bell peppers, frozen corn and onions.  A finely chopped jalapeno gives them a little bit of a kick, too – but I didn’t have any on hand that day.

Though I’ve made them with chicken and shrimp before, I almost always use steak tips which I sear in the pan after sautéing the veggies.  I am a red meat lover but try to limit eating it to once or twice a week.

IMG_5818 I love the whole wheat tortillas from Trader Joe’s because they have fiber in them and hold together well.  The holding together part is important because I habitually overfill my tortillas.

IMG_5820 See, it’s bursting at the seams! For extra fiber and protein, I spoon on some canned black beans, which I heat on the stove (juice included) while the quesadillas cook.  I obviously give myself a hearty dollop of sour cream, too.

If I know I won’t be able to get through all the veggies within a few days , I cook up some quesadillas, wrap them in foil and pop them in the freezer! They make a great Goodness to Go lunch on work days since they’re mostly defrosted by lunchtime and then just take a couple minutes in the microwave.  I bring beans and sour cream on the side, obviously.  I swear when I have one of these babies for lunch I don’t even think about snacks all afternoon! I highly recommend you get yourself some whole wheat tortillas and make some for yourself.

Tonight, my friend Stephanie and I are going to Bikram and then she’s coming over for dinner!  Guess what, I’m making my very first roast beef! I don’t know why but I got a bizarre craving for it in class today and haven’t been able to stop thinking about it – so it’s happening.

These look absolutely yummy. I could eat Mexican every night. Great idea topping them off with black beans!!

I love reading your blog! I will look into making this recipe for myself. I never thought to freeze steak that has been cooked and I’m glad to hear it holds up well in the freezer.
