Woo, it’s Friday! I’m finally starting to get back into the swing of things after 4 days of classes – just in time for the weekend to begin. YES.
It took me 2 solid days to get organized after being in Spain for 3 1/2 weeks but I’m back on track with my morning runs (thanks to Anne!) and packing healthy meals to eat while I’m on campus.
My breakfast this morning was cottage cheese and nectarine. It’s still way too hot for any warm, oat-related breakfast here in NC so I try to either do yogurt or cottage cheese for breakfast to keep things cool! Nectarines are everywhere this time of year (I’m guessing they’re in season?) and are a great mate for low-fat cottage cheese.

I missed my whole grains in Spain so lunch today was a turkey and salami sandwich with lettuce and a touch of mayo on my favorite multigrain bread.

Oh, and a portion-controlled Tupperware of salt & vinegar chips, which I also missed while I was in Spain!

Confession: I have a hard time eating a sandwich without my salt & vinegar chips.
Also, now that my fridge is full again, I’ve gotten back into cooking! The heat in Spain was a bit much for me (with A/C only in the bedroom) so we frequently stuck to quick tapas and meals out. I’m happy to be back in the kitchen.

I love getting back into my eating routine after getting back from vacation. I think that’s the one plus-side to coming home :)
This post makes me want to go to the grocery store to get some nectarines.
