Hi guys! Does your “to do” list occasionally grow longer, not shorter, as the day goes on? That was me yesterday. I left the house at 7:30am and didn’t return for 12 hours. Granted it was a productive 12 hours but I was absolutely starving when I walked through the door last night. Instead of heading to the pantry for a snack, I went straight to the fridge where I found this beautiful bird just waiting to be eaten.

I knew it was going to be a busy week so last Friday I prepped the bird and let it chill out over the weekend. I know what you’re thinking. Last Friday? Yep. Check out my post on how to roast the perfect chicken and you’ll see why.
While creating my dumpling debacle the other day, I popped the bird into a hot oven and let it do its thing. 40 minutes later, I had a reserve of lean protein for the week.

To pull a healthy meal together, I just “baked” a small sweet potato in the microwave for 4 minutes, topped it with some corn and Greek yogurt and tossed a handful of greens onto my plate along with some leftover cauliflower. Dinner was served in under 5 minutes!
Despite my quick dinner, it was a short night for me last night. In bed at midnight and up at 6 this morning to meet Anne for our usual Thursday run before class. We are both running the Tar Heel 10 Miler on Saturday and wanted to get a few more miles on our legs before taking a rest day tomorrow.

It’s another busy day but I’m looking forward to another quick & easy chicken dinner tonight!
