Hi friends! Hope you’re back in the swing of things after the long weekend. I started my general medicine & psychiatry rotation so it was another interesting day at the hospital today! There is a wide range of nutrition-related health issues in both areas so I’m guaranteed to learn a lot in the next two weeks.

One thing I’m still trying to fine tune is my work week schedule. I’ve gotten better at going to bed at a reasonable time but there’s still some tweaking that needs to be done. I’m trying to fit in 5-10 hours of (paid) work each week on top of my 40 hrs/week at the internship (and blogging) which makes for some long, long days. Today was one of those days.

After a 1 hour workout, 8 hours of interning and 3 hours of work, I didn’t have it in my to think about my next meal when I walked in the door tonight. Luckily, I came home to some healthy leftovers in the fridge – vegetable red curry with brown rice.

This dish was good but I’m still on the fence about whether or not it’s earned a spot on the recipe page. Either way, it did the trick tonight. I’m happy to share if you’re interested though!

Well, it’s time to throw a quick coat of polish on my neglected fingernails and head off to bed. I sometimes play this game of “can I fall asleep and stay still long enough to let my nails dry.” It usually doesn’t work out too well but on nights like tonight, it’s necessary.

I have a new at-home workout written up for tomorrow morning that should be coming to you later this week if all goes well!
