Day 6: Dallas, Texas
The little things I’ve relearned to appreciate after six days, 1,367 miles and 21 hours 6 minutes of driving.
- A home cooked meal (with lots of vegetables)
- A 45 minute jog around the neighborhood
- Doing laundry
By the time we arrived in Dallas on Thursday night, Libby and I were feeling exceptionally grateful to be spending the next couple nights at the home of a close family friend. We slept in, did a couple of much-needed loads of laundry and worked out. Later Friday afternoon, Libby and I hit up the grocery store to replenish our stash of healthy snacks. While we were at it, we grabbed armfuls of fresh vegetables. Libby and I took over Cindy’s kitchen that night and whipped up a giant pot of vegetarian quinoa chili. Texas & chili just made sense.




I made a few adjustments to this recipe from two peas & their pod – subbed butternut squash for carrots, omitted celery and added 2 squares of unsweetened chocolate. Yes, you read that right. Chocolate. It’s amazing in chili. Mmmm, mmmmm, mmmmm. I’d definitely make this again.
On the side we had sweet & spicy pecan & goat cheese salad topped with dried cherries and a yummy homemade lime dressing.

We didn’t see any sights in Dallas but quite honestly, Libby and I appreciated having the day to exercise, grocery shop, cook and do laundry. It’s nice to appreciate doing routine things again. We’re off to Santa Fe next. Hope you’re having a great weekend!

You likely already have food recommendations in Santa Fe, but I highly recommend Maria’s for Mexican – hands down the best margaritas and mexican food I’ve ever had!

It’s definitely nice to get back into the routine comforts of home cooked meals, clean laundry, and energizing workouts. That chili looks amazing, I’ve never added dark chocolate to a recipe before but now I’m curious to try it out!
